Executive Chef Gerardo Molina Cruz, who honed his passion preparing elaborate meals in his grandmother’s kitchen, is committed to sourcing local ingredients to compose elegant, innovative, and seasonally driven dishes. Fresh in concept and preparation, the menu’s Mexican and Mayan flavors appeal to many palates. Fish is the signature item, from fresh lobster to grouper and snapper. Our wood-burning oven features prominently on the menu, providing us with warm oat breads, thin-crust pizzas, and charred pepper salsas.
OUR CHEF - Gerardo Molina Cruz
Gerardo Molina Cruz was born in Veracruz, Mexico. From early childhood he was always intimately involved in the kitchen sphere, learning family recipes from his grandmother. In his teens he took over the household cooking for his younger sisters so their mother could go to work to support the family. At age 14, when the Molina family moved to Tulum, Gerardo began working in a small hotel as a line cook, and his career took off. Within a couple years, Gerardo was hired by Chef Jean Luc of Grand Bahia Principe Hotel, who gave him a tremendous opportunity as executive chef for a full season. Chef Gerardo credits his incredible mentors with shaping his culinary style. Under the guidance of chefs like Laura Rodriguez and Merrill Moore, Chef Gerardo has brought great enthusiasm and discipline to the kitchen, and is always eager to gain expertise from visiting industry greats like Top Chef Mike Isabella. His passion and creativity come across in every dish, and he always instills his work with the flavors and techniques he learned from his grandmother.
